Serra Negra or “Black Mountain” is a Brazilian profile that captures the most classic profile from Minas Gerais.

This is  a round, sweet, rather exotically nuanced cup that should please coffee romantics.

Decaffeinating process is done using pure water from the highest volcanic mountain in Mexico (Pico de Orizaba). The green beans are immersed in water in order to extract the caffeine. The water contains the soluble components of the coffee beans which holds the elements of the flavor, so that during the decaffeination process the beans retain much of their natural flavor. To separate the caffeine from the water containing the soluble components, the water passes through a special filter which removes the caffeine. Then flavour compounds are reintroduced to the green coffee seeds, which reabsorb the soluble materials. The coffee is then dried once more.

As a result of this process, Descamex obtains beans that are 99.9% caffeine free.
