Honduras’s Comayagua department is home to the Comayagua mountain range, with peaks that reach as high as 2,450 meters above sea level. Producers in the area have the benefit of cool evenings in the mountainous landscape, high moisture and rich soil.
The best Honduran coffee will be the Strictly High Grown SHG/SHB grade means these altitudes allow the coffee to grow slower, increasing the mineral and nutrient uptakes. Bird-Friendly or Shade-Grown coffee, which intersperses other trees with the coffee trees to create shade and further slows the coffee growing.
